Carrot butter cake


It's been quite a long time since we last baked anything, so last Sat, mom in-law and I decided to bake using whatever ingredients we can find. Below is our recipe for carrot butter cake (Wai Wai & MIL's version):

a)125 gms of self raising flour
b)125 gms of butter
c)60 gms of fine sugar
d)3 eggs (average size)
e)3 spoonful of milk
f)1 teaspoon of essence vanilla (we don't have this)
g)Crated carrot (1/2 or whole, depending on your preference)

Beat (b) and (c) until fluffy (turned white) using a mixer.
Add (a) gradually - I spread into 3 equal portion, beat until even
Pre-heat oven, 160 degree Celcius
Add (d) gradually, beat until even
Add (e), (f) and (g), beat until even
Pour into a 9" diameter baking pan spread with butter
Baked under 160 degree Celcius for 45 minutes

Viola, your carrot butter cake is ready, maintain cake in the oven for 10 - 15 minutes, remove from oven and let it cool under room temperature for another 15 minutes before cutting it. Best served with tea....
